Jollof rice is a popular dish in West Africa that is easy to make and packed with flavor. The dish is made with long-grain rice, tomatoes, onions, and a variety of spices. Here’s a simple recipe to get you started:

To prepare jollof rice, you will need:

  1. 2 cups of long-grain rice
  2. 2 large tomatoes, chopped
  3.  1 large onion, chopped
  4. 2 tablespoons of tomato paste
  5. 2 tablespoons of vegetable oil
  6. 2 cups of chicken broth
  7. 1 teaspoon of salt
  8. 1 teaspoon of black pepper
  9. 1 teaspoon of paprika
  10. 1 teaspoon of garlic powder
  11. 1 teaspoon of ginger powder
  12. habanero pepper (optional)
  13. 2 bay leaves
  14. 1 teaspoon of dried thyme
  15. 2 tablespoons of chopped fresh parsley

Here’s how to make it:

1. Rinse the rice several times until the water runs clear and then let it soak in water for 15-20 minutes.

2. Blend the chopped tomatoes, onions, and habanero pepper (if using) until smooth.

3. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

4. Add the tomato paste to the oil and stir for about a minute, then add the blended tomato mixture.

5. Cook the tomato mixture, stirring occasionally, until the excess water has evaporated and the mixture has thickened, about 10-15 minutes.

6. Add the chicken broth, salt, black pepper, paprika, garlic powder, ginger powder, bay leaves, and dried thyme to the pot and stir well.

7. Bring the mixture to a boil and then reduce the heat to low.

8. Drain the rice and add it to the pot, stirring to combine.

9. Cover the pot tightly with a lid and cook the rice on low heat until the rice is tender and the liquid has been absorbed, about 20-25 minutes.

10. When the rice is done, remove the pot from the heat and let it rest for 5-10 minutes.

11. Fluff the rice with a fork and stir in the chopped parsley.

12. Serve hot with your favorite protein, such as chicken, beef or fish.

Please note that you can add chicken, beef, or vegetables to the dish for added flavor and nutrition.
